These are the very first cupcakes I’ve ever made. I made these for a party a friend is throwing tonight at their place. Since we didn’t have butter and our electric mixer is broken (and has been for months; didn’t get one for Christmas even though it was on my list), I substituted canola oil for butter because oil doesn’t need beating/softening.
Finding an easy recipe for the cupcake part was, well, easy. It was the frosting that I spent hours researching for. In the end, I just got lazy. I simply melted a quarter pound of white chocolate, dipped the top of the cupcakes in it and sprinkled some chocolate sprinkles over the frosting.
Now that the cupcakes looked really good, I was afraid to eat it. If it didn’t taste as good as it looked, I’d be really disappointed. So Troy volunteered to test it out for me. He took a few bites and gave me a thumb up. That’s always a good sign. So I had one too and, I don’t know, I have mixed feelings about it. It’s not bad. It just doesn’t taste very chocolatey. Maybe I should’ve put more chocolate into the cupcake batter. Chocolate frosting would’ve worked better on it than the white chocolate frosting. It’s also very filling. I don’t think I could have another until hours later.
And that, my gentle readers, is my review of the very first cupcakes I’ve ever made. Hopefully the people at the party would eat them anyway.
